What arrives is three machines that each work perfectly well, installed in a room that still cannot get 800 kg of vegetables ready before service. The equipment was bought as items rather than as a line, and a line only ever runs at the speed of its slowest stage.

This guide covers how to size a vegetable preparation line by throughput instead of by seat count, what each stage actually does to your yield and your water bill, the power and drainage the room has to provide, and indicative FOB China prices for 2026.

What is a vegetable prep line, and how is it different from a food processor?

A food processor is a single machine that slices or dices a batch a cook has already washed and trimmed. A vegetable prep line is a sequence of machines that takes raw, soil-bearing produce off a delivery pallet and turns it into washed, peeled, cut, drained product. The two are complements: most kitchens under roughly 400 covers a day are better served by a bench machine, and our commercial food processor buying guide covers that tier. A line earns its floor space once raw intake passes roughly 300–500 kg a day, or when one production unit supplies several outlets.

A conventional line has five stages — reception and sorting, washing, peeling, cutting, dewatering — feeding chilled holding. Not every kitchen needs all five. A hotel buying pre-peeled potatoes can drop the peeler; a salad-heavy operation may need two wash tanks and a centrifuge but no peeler at all. What matters is that the stages you do install are rated to the same throughput.

How do you size a vegetable prep line?

Size the line in kilograms per hour of raw intake, not in covers. Work backwards from three numbers.

Daily raw intake by weight. A 250-room hotel with two outlets and banqueting typically runs 250–450 kg a day; a school or hospital catering 2,000 meals runs 400–700 kg; a central kitchen supplying eight to twelve outlets runs 1,200–3,000 kg.

Usable prep window. The real constraint. Most kitchens have one shift of four to six hours and cannot start until deliveries are checked. 600 kg over a five-hour window is a 120 kg/h line, not a 600 kg/h line.

Peak-day multiplier. Banqueting, Ramadan service and school term starts push intake 40–80% above average. A line 30% short on peak simply produces overtime.

Then derate. Manufacturer ratings are measured on one ideal product — usually potatoes or cabbage — with continuous feeding and no changeover. A real prep room switches product six or eight times a shift, and each changeover costs three to eight minutes for blade swaps and rinsing. Plan on 60–70% of nameplate. A cutter rated 500 kg/h is a 300–350 kg/h machine in a hotel.

Washing: bubble, vortex or a three-tank sequence?

Basket or tank bubble washers (300–500 kg/h) agitate a submerged batch with air from a side-channel blower. Gentle, good for leaf and herbs, and they fit rooms that cannot take a conveyor. Being batch machines, real output depends on how fast staff load and unload.

Continuous bubble washers run 500–2,000 kg/h with an inclined outfeed conveyor and a recirculation pump; large units reach 3,000 kg/h. These are the central-kitchen workhorses because they hold a steady rate and hand off directly to the next stage.

Vortex and spray washers use directed water flow rather than air. More aggressive, which suits root vegetables carrying heavy soil but damages delicate leaf.

For visibly soiled produce, one tank is not enough. The standard arrangement is three stages: a pre-wash to shed soil and stones, a main sanitising wash, and a clean-water final rinse. A single tank means the last basket of the shift is washed in the accumulated soil of the first.

What goes in the wash water?

Chlorine remains the most widely used produce wash sanitiser. Published guidance from the US FDA describes chlorine added to post-harvest wash water at roughly 50–200 ppm total chlorine, at pH 6.0–7.5, with a contact time of about one to two minutes. Canadian guidance sets an operating window around 100–150 ppm total chlorine, with 2–7 ppm free residual chlorine after contact with the produce, and a final rinse at that lower residual level. Contact time should generally stay under five minutes.

Three practical points follow from that, and all three belong in your equipment specification rather than in a training manual:

Monitor free chlorine, not dose. Organic load consumes chlorine continuously, so a tank dosed correctly at 08:00 can be effectively unsanitised by 09:30. Specify an inline free-chlorine and pH probe with an alarm, or accept that someone will be running test strips every 30 minutes and recording the result.

pH controls whether the chlorine works at all. Above roughly pH 7.5 most of the chlorine is present as the far less effective hypochlorite ion, and hard make-up water drifts the tank alkaline over a shift. Where incoming water is hard, treat it — the same argument we make for steam and ice equipment in our kitchen water treatment guide.

Ozone is an alternative, not a shortcut. Dosing modules are cheap to add and leave no chemical residue, but ozone decays in seconds, tolerates organic load poorly and needs room ventilation. It works best in a dedicated final-rinse tank.

Wash water is also why prep rooms flood. A continuous washer discharges 200–600 litres per tank dump carrying grit that will silt any drain not designed for it. Specify a channel drain with a removable silt basket rather than a point gully, and set the run out early — see our kitchen drainage and grease trap guide.

Peeling: what does abrasive peeling really cost you?

Commercial peelers work by tumbling produce against an abrasive drum and disc while water flushes the skin away. Batch machines take 10–30 kg per load and deliver roughly 200–600 kg/h. Continuous rumblers reach 1,000 kg/h peeling and up to 1,500 kg/h polishing.

The specification argument that matters is yield, not throughput. Abrasive peeling removes 8–15% of raw weight on potatoes depending on drum time, abrasive grade and tuber shape, and more on irregular roots such as carrots and celeriac. Over-peeling is the largest hidden cost on the line and it is entirely a matter of timer discipline: a kitchen running 300 kg of potatoes a day that over-peels by five percentage points throws away roughly 15 kg daily.

So specify a peeler with a repeatable digital timer rather than a spring dial, size the batch so the drum runs 60–80% full (an under-loaded drum tumbles badly and peels unevenly), and insist on a peel-waste outlet discharging into a solids trap. Peel is starch and skin; it will not pass a grease separator and it blocks a 100 mm branch quickly.

Cutting: blade sets, feed type and honest throughput

Cutters divide into three tiers. Bench multi-function machines with gravity hopper feed run below roughly 200 kg/h and suit single-site restaurants. Mid-range floor units with belt feed handle 300–1,000 kg/h. Industrial belt-feed slicers and dicers reach 2,000–3,500 kg/h.

Two decisions matter more than the headline rate. Feed type: gravity hopper feed is cheaper and gives inconsistent cut on long produce, while belt feed with a hold-down keeps geometry consistent — which is what actually drives cooking uniformity in a central kitchen. And the blade set: most quotations include two or three discs, while a working hotel kitchen needs slicing at two thicknesses, julienne, dicing at 10 mm and 20 mm and a shredding disc, so six to eight. Price the discs you need at quotation stage, because ordering them later means a second shipment for a few kilograms of steel.

Dewatering: the stage most kitchens skip

Cut, washed vegetables carry surface water, and in a salad or a chilled pack that water halves shelf life, dilutes dressing and produces the pooling customers reject. A dewatering centrifuge takes 10–30 kg per batch on a 1–3 minute cycle. It is the cheapest quality upgrade on the line and the one most often value-engineered out. If the kitchen produces chilled salad, prepared fruit or vacuum-packed vegetables, it belongs in the specification.

What power, water and drainage does the line need?

Energía. Bench cutters and small peelers run 0.75–2.2 kW on 220–240 V single phase. Bubble washer pump and blower packages run 1.5–5.5 kW, centrifuges 1.1–2.2 kW, and industrial cutters and rumblers 3–7.5 kW. Anything above roughly 2.2 kW should be quoted three-phase 380–415 V. Confirm voltage, frequency and phase before the order is built, not after — the reasoning is in our kitchen equipment voltage guide.

Agua. Allow 15–25 mm supply to each wash stage, and budget 3–8 litres per kilogram of produce for a three-stage sequence with partial recirculation.

Drainage. Channel drain with silt basket, minimum 100 mm branch, falls of 1:60–1:80, and a rodding point. Do not route peel waste through a grease separator.

Room. The prep room should be a separate temperature zone, ideally 12–16 °C, sitting between goods-in and the cold store. A line laid out in a hot corridor produces microbiologically marginal product regardless of the wash chemistry.

Vegetable prep line FOB prices, 2026

Indicative FOB China ranges for 304 stainless equipment, exclusive of freight, duty and local installation:

Equipos

Capacidad típica

FOB USD

Basket / tank bubble washer

300–500 kg/h

900–2,200

Continuous bubble washer with outfeed conveyor

1,000–2,000 kg/h

3,500–9,500

Ozone dosing module (add-on)

—

400–1,200

Batch abrasive peeler

15–30 kg/batch

700–1,800

Continuous peeler / rumbler

500–1,000 kg/h

4,500–12,000

Bench multi-function vegetable cutter

200–600 kg/h

800–2,200

Industrial belt-feed slicer / dicer

1,000–2,000 kg/h

4,000–11,000

Dewatering centrifuge

10–20 kg/batch

1,200–3,200

Additional cutting disc set (per disc)

—

60–180

Complete line, installed capacity

~500 kg/h

12,000–28,000

Complete line, installed capacity

~1,500 kg/h

35,000–75,000

Prices move with stainless coil pricing and motor specification, so treat these as planning figures. Buying the line from a factory rather than through a trading desk matters more here than in most categories: a prep line is a set of machines that have to be matched to one another on rate, height and discharge direction, and a reseller assembling three catalogue items from three sources cannot do that. Factory-direct also removes the margin layer on what is a high-tonnage, low-complexity fabrication. If you are still building a shortlist, our guide to the principales fabricantes de equipos de cocina comercial de China en 2026 is a starting point.

Five mistakes we see on vegetable prep line orders

Mismatched stage rates. A 1,000 kg/h washer feeding a 300 kg/h cutter is a 300 kg/h line with an expensive washer in front of it.

No discharge-height check. Machines bought separately rarely line up. Confirm outfeed and infeed heights across every adjacent pair, or budget for transfer tables.

Drainage designed after the equipment lands. Grit and peel need a channel and a silt basket; retrofitting that means breaking the floor.

One blade set. The kitchen ends up hand-cutting anything the supplied disc will not do.

No spares on the first container. Blades, abrasive discs, tank seals and the wash pump are what stop the line. We ship a spare blade and abrasive disc set, tank and shaft seals and a spare recirculation pump with the initial order, back drives and gearboxes with a written two-year warranty and name the resupply source on the packing list — downtime in this category is almost always a consumable, not a machine failure.

What belongs on the purchase order

Six lines prevent most of the problems above: throughput in kg/h at each stage for your product mix rather than the catalogue product; voltage, frequency and phase; infeed and outfeed heights for every machine; the full disc and blade schedule by cut and thickness; stainless grade; and the spare parts pack, itemised.

Get those right and a prep line is one of the more reliably profitable investments in a central kitchen — it converts labour cost into throughput and improves cut consistency, which is what a multi-outlet operator is really buying. For how the line sits inside a larger production facility, see our central kitchen planning guide.

Preguntas frecuentes

How much floor space does a vegetable prep line need?
Allow roughly 25–35 m² for a 500 kg/h line and 60–90 m² for a 1,500 kg/h line, including reception, the machine run, transfer tables and a chilled holding point. The usual mistake is to plan the machine footprints and forget the crate and trolley space at each end.

Do I need a peeler if I buy pre-peeled vegetables?
No, and in markets where reliable pre-peeled supply exists, buying it often beats peeling in-house once yield loss and labour are counted. The case for an in-house peeler is strongest where supply is unreliable, where cold chain to the kitchen is weak, or where the kitchen is remote from its supply base.

Can one machine wash, peel and cut?
Combination machines exist and are useful below about 150 kg/h. Above that, combining functions means the whole line stops for every changeover and every fault, and the compromise geometry produces poorer cut quality. Separate stages are more productive at central-kitchen volumes.

What stainless grade should a vegetable prep line be?
304 for the majority of components. Specify 316 for tanks, baskets and fasteners where chloride exposure is high — coastal sites, chlorine-dosed wash water at the upper end of the range, and brine or pickling work.
