The equipment arrives with valid certificates, the chef signs for it, and eighteen months later an inspector runs a gloved finger behind a sealed counter and finds a crevice that cannot be cleaned. Nobody did anything wrong at handover. The problem was specified in.

Hygienic design is not something you can inspect your way out of at the end. It is a set of geometry, material and installation decisions that must appear in the purchase order, because once the sheet metal is folded and the welds are laid, cleanability is fixed for the whole service life of that equipment. This guide sets out those decisions, the numbers behind them, and the clauses that put them into a contract.

It resolves into three layers, and buyers routinely specify the first while ignoring the other two: material (what the food touches), geometry (radii, welds, edges, hollow sections — where most audit findings originate, and almost never written into a specification) and installation (clearances, sealing, falls, whether the unit can be pulled forward at all).

How should a commercial kitchen be zoned for HACCP?

Zoning is the cheapest food-safety control you will ever buy: it costs nothing but discipline at the layout stage. The principle is one-way flow — goods in → storage → raw preparation → cooking → plating → wash-up, with no route carrying raw product back across ready-to-eat product. Four rules follow:

Separate raw and ready-to-eat preparation physically, not just by colour-coded boards. A shared sink between the two is a finding waiting to happen.

One dedicated hand-wash station per zone, reachable without crossing into another zone, wrist- or knee-operated, with warm water. Auditors count these before anything else.

Wash-up flows one way too — soiled in at one end, clean out at the other, with enough landing table that clean crockery is never set down on the dirty side.

High-care areas run at slight positive pressure to adjacent spaces, so air moves out of the clean zone rather than into it. That is a ventilation design input and must reach the HVAC engineer before ductwork is ordered.

Zoning is set in the floor plan — our commercial prep kitchen layout guide covers the flow and zone geometry in detail.

Which stainless grade and finish do food-contact surfaces need?

Grade 304 (1.4301) is the default for food-contact work and entirely adequate for tabling, sinks, shelving and equipment bodies. Grade 316 or 316L adds molybdenum and materially better chloride resistance, so it earns its premium in three places: coastal and high-humidity sites, areas where chlorinated sanitiser is used aggressively, and surfaces in constant contact with brine, acidic marinades or seafood. Specifying it for a whole kitchen wastes budget; specifying it for the fish section, pot-wash splashbacks and external fixings on a beachfront resort is money well spent.

Two numbers matter more than the grade, and neither appears on most quotations:

Surface roughness. EHEDG Document 8 and the 3-A sanitary standards both put product-contact surfaces at Ra ≤ 0.8 µm. A standard 2B mill finish normally sits under that; a coarse brushed finish applied after fabrication may not. If a surface is polished after welding, ask what Ra it finishes at.

Sheet thickness. 1.0 mm is light-duty, 1.2 mm normal for worktops and sink bowls, 1.5 mm what you want under a heavy pot-wash or butchery bench. Thin tops deflect, deflection breaks the seal at the splashback, and the crack that follows is a hygiene defect, not a cosmetic one.

Ask for an EN 10204 3.1 mill certificate against delivered material — routine for any real manufacturer, impossible for anyone assembling from mixed-origin sheet, and one of the most efficient supplier tests available to a buyer. If you are still shortlisting, our guide to the Лучшие производители кухонного оборудования в Китае covers what separates a fabricator from a consolidator, and gauge economics are treated at length in our stainless steel fabrication guide.

What radius, weld and edge details make equipment cleanable?

Internal radii. NSF/ANSI 2 addresses the awkward case directly: where three planes meet and form three internal angles, two corners must have a radius of not less than 1/8 inch (3.2 mm) and the third not less than 1/4 inch (6.4 mm). The standard does not allow solder or filler to create that radius on metal — it must be formed in the parent material. A bead of silicone run into a sharp corner is a repair, not a design.

Welds. Food-contact welds should be continuous and full-penetration, then ground and polished back to the surrounding finish. Stitch welding is fine on a hidden frame member and unacceptable anywhere product or wash water can reach, because every gap between stitches is a capillary that fills and never dries. Post-weld pickling and passivation restores the chromium oxide layer welding destroys — skipping it is why cheap tables bloom rust along the seams within a season.

Edges and hollow sections. A raised marine edge contains spillage instead of sending it down the front of the cabinet, and where a top meets a splashback a coved return formed from the same sheet beats a silicone joint every time — silicone is a consumable that discolours, peels and harbours growth. Tube legs and frames must be sealed at both ends: an open leg standing in a wet floor wicks water up inside itself, and no cleaning schedule reaches the inside of a leg.

How much clearance is required under and behind equipment?

The FDA Food Code gives the clearest numeric benchmark, and most national codes land nearby. Floor-mounted equipment that is not easily movable must be either sealed to the floor или elevated on legs giving at least 150 mm (6 inches) of clearance, relaxed to 100 mm (4 inches) only where no point of floor beneath is more than 150 mm from the point of cleaning access. Counter-mounted equipment needs at least 100 mm (4 inches) from the countertop, or must be sealed to it.

Choose between «sealed» and «on legs» deliberately. Sealed plinths look cleaner and mop more easily, but are only hygienic while the seal stays intact — a failed seal creates a void you cannot inspect. Legs are more forgiving and the safer default in wet areas. Under roughly 200 kg, heavy-duty castors with front brakes beat both: the unit becomes «easily movable», the clearance requirement falls away, and the floor beneath actually gets cleaned. Gullies and falls belong on the same drawing as the equipment layout — see our kitchen drainage and grease trap guide.

What about washdown areas and ingress protection?

In any area cleaned with a hose, enclosures and control panels need an ingress protection rating under IEC 60529 matched to the cleaning method: IPX5 for water jets from a nozzle, IPX6 for powerful jets. Cable entries need glands, not grommets, and panels should sit out of the direct spray line — an IP rating is a test result under defined conditions, not a promise about a pressure washer held at 100 mm. It is most often missed on motor housings, under-counter sockets and the junction boxes of heated units.

Which temperature control points do auditors check?

Chilled holding is generally specified at ≤5 °C (UK practice treats 8 °C as the legal maximum with 5 °C as the working target), hot holding at ≥63 °C under UK and EU practice or ≥57 °C (135 °F) under the FDA Food Code. What auditors look for is not the setpoint but the evidence: a calibrated probe port, a readable display, a record. Ask for probe access rather than relying on lifting a lid, and decide at order stage whether you want data logging — retrofitting it across a fleet of cabinets costs several times what it costs on the line. Equipment-side detail is in our hot holding and banquet transport guide.

A hygienic-design clause set you can paste into a tender

Food-contact surfaces AISI 304 minimum; 316/316L in fish preparation, pot-wash splashbacks and all external fixings on coastal sites.

Food-contact finish Ra ≤ 0.8 µm, stated after any post-weld polishing; worktops and sink bowls 1.2 mm minimum, 1.5 mm under pot-wash and butchery.

Internal corners formed in parent material to NSF/ANSI 2 radii; no filler or sealant used to create a radius.

Food-contact and splash-zone welds continuous and full-penetration, ground and polished to base finish, pickled and passivated; hollow sections sealed at both ends.

Coved returns between tops and upstands formed from the same sheet; silicone only at building interfaces.

Floor-standing units on adjustable legs giving ≥150 mm clear, or on braked castors; sealed plinths only where shown on the approved drawing.

Enclosures IPX5 minimum in washdown zones, cable entries via glands; EN 10204 3.1 mill certificates and an approved dimensioned shop drawing for every fabricated item before cutting.

What do the hygienic upgrades cost?

Indicative uplifts against a standard specification, ex-works, subject to size, quantity and drawing: 304 → 316/316L on food-contact sheet +35–60% of the item’s material content; 1.0 → 1.2 mm worktop +8–15%; coved-corner sink bowls +10–20% per bowl; sealed plinth instead of adjustable legs +USD 40–120 per linear metre; IP65 panel upgrade +USD 60–200 per panel; pickling and passivation across a tabling package +3–6%. Across a typical hotel kitchen fabrication package the full hygienic specification adds roughly 8–14% — against a remediation bill that routinely runs several times that, plus the trading days lost while it happens.

How Grace builds to a hygienic specification

Every fabricated item we make comes from a dimensioned shop drawing the buyer approves before any sheet is cut, so the details above are drawing items rather than assumptions: corner radii, coved returns, upstand heights, leg type and adjustment range, plinth detail, gland positions and the finish for each surface. Non-standard lengths and cut-outs taken from a site survey carry no tooling charge — which is what lets a run of tabling be made to the wall as measured, rather than trimmed to fit on site.

We supply EN 10204 3.1 mill certificates against delivered material, and prepare the technical file — test reports, wiring diagrams, component lists and rating plate artwork — in the format certification bodies accept directly. It remains useful everywhere as a design benchmark, because the radii, materials and cleanability criteria in NSF/ANSI 2 are specific and testable in a way general hygiene legislation is not. Many buyers outside the US specify «designed in accordance with NSF/ANSI 2» without requiring the listing itself.

Do I need 316 stainless steel throughout a coastal hotel kitchen?

Rarely. Target it: 316 or 316L for fish and seafood preparation, pot-wash splashbacks, surfaces in contact with brine or acidic products, and all external fixings, fasteners and exposed hardware — usually what fails first in salt air. 304 handles the balance of a well-ventilated kitchen.
