Most commercial kitchens are specified from the delivery door to the pass. Everything after the pass — the sixty to ninety minutes between a correctly cooked dish and a guest actually eating it — tends to get bought late, out of whatever budget is left, from a catalogue page nobody reviewed. It is also where most temperature complaints, dried-out banquet food and failed inspections come from. The cooking line is rarely the problem. The holding and transport equipment usually is.
This guide covers the four classes of hot holding and food transport equipment a hotel, banqueting operation or contract caterer actually needs, the temperature and humidity rules that govern them in different jurisdictions, how to size capacity in Gastronorm terms rather than by guesswork, what the equipment draws electrically, and indicative FOB China prices for 2026.
What temperature does hot holding legally have to reach?
There is no single global number, and buyers who specify equipment against the wrong one end up with cabinets that pass in one market and fail in another.
Under the US FDA Food Code, time/temperature control for safety food must be held at 57 °C (135 °F) or above (clause 3-501.16(A)(1)), with a narrow exception allowing certain roasts at 54 °C (130 °F). Under UK Food Standards Agency guidance, hot food must be kept at 63 °C or above. Those six degrees matter: a cabinet marketed on a 60 °C holding capability is comfortably compliant in the United States and marginal in the United Kingdom, and it will fall below 63 °C every time a busy service opens the door.
The “danger zone” differs too: USDA FSIS gives it as 4.4–60 °C (40–140 °F), the FDA Food Code does not use the phrase at all, and UK practice quotes 8–63 °C after the Food Safety (Temperature Control) Regulations 1995.
The allowances for going out of temperature also differ, and they are not interchangeable:
- UK: food may be taken out of hot holding for display for up to two hours, once only. After that it must be reheated until steaming hot and returned to hot holding, chilled quickly to 8 °C or below, or thrown away.
- US: FDA 3-501.19 permits time as a public health control — a maximum of four hours without temperature control, provided the food was at 57 °C or above when removed, is marked with a discard time, is discarded at four hours, and written procedures are held on the premises.
Reheating rules diverge in the same way. The FDA requires reheating for hot holding to reach 74 °C (165 °F) for 15 seconds within two hours. In Scotland, reheating to not less than 82 °C is a statutory requirement under the Food Hygiene (Scotland) Regulations 2006; in England, Wales and Northern Ireland, 70 °C for two minutes is guidance rather than a fixed statutory figure.
Specify against the number your inspector uses. If a project spans several jurisdictions — a hotel group standardising across the Gulf, East Africa and the UK, for instance — specify to the highest, which in practice means equipment that holds 63 °C with the door in use, not 63 °C on a closed-door datasheet.
Why food dries out in a hot box, and what humidity control actually buys
Holding cabinets fall into three groups, and the price difference between them is almost entirely about moisture.
Dry cabinets (“hot boxes”) circulate heated air. Moisture leaves the food and leaves the cabinet. They are cheap, they hold safely, and they are fine for thirty minutes. At ninety minutes, rice crusts and roast meat greys at the edges. Thermostat accuracy on inexpensive units is often only about ±5 °C.
Passive humidified cabinets have an unheated water pan in the base. They are barely better than dry cabinets — the water only evaporates once the cabinet is already hot — and they are prone to hot and cold zones.
Actively humidified cabinets have a heated reservoir, so moisture is produced on demand and holding times extend to several hours. This is the class worth paying for if you plate banquets, hold rice or hold roasted meats.
Be sceptical of relative humidity as a specification: RH is meaningless without the temperature it was measured at, and 50% RH can exist at 49 °C and at 118 °C. Note the heating method too. Radiant-cable designs with no fan avoid evaporative drying but recover slowly after a door opening; fan-forced is the better choice on a high-traffic banquet floor, radiant on long undisturbed holds.
One more distinction that costs money when it is missed. Cook-and-hold ovens cook at low temperature and then drop into a hold cycle in the same cabinet. Hold-only cabinets never cook — they keep already-finished food above the legal minimum. Buying cook-and-hold units for a job that only needs holding is the single most common overspend in this category. Buying hold-only units and expecting them to finish a joint of beef overnight is the most common under-spec.

Most hotel projects need all four in some proportion. A banqueting operation that only buys cabinets ends up plating in the ballroom corridor; one that only buys carts has nowhere to hold the bulk food the carts are filled from. How to size holding capacity in Gastronorm
Gastronorm is standardised under EN 631-1. GN 1/1 is 530 × 325 mm, and standard depths are 20, 40, 65, 100, 150 and 200 mm. Approximate usable volumes for GN 1/1 are around 8.5–9 litres at 65 mm, 14 litres at 100 mm, 21 litres at 150 mm and 27–28 litres at 200 mm, varying slightly with material and corner radius.
Two sizing errors recur constantly:
Pan count is not capacity. A cabinet advertised as “16-pan” is usually counted at 65 mm rack pitch. Load it with 100 mm pans and it is an eight-pan cabinet. Decide your pan depths first — banquet vegetables and rice are normally 100 mm — then count the slots you will actually use, and buy the cabinet on that number.
Plate carts are sized by plate diameter, not by plate count. A 120-plate cart built around 27 cm plates will not close on 31 cm banquet plates. Send the supplier the actual plate — or at minimum the diameter, the rim profile and the dome you intend to use — before the cart is built.
As a starting point on a banquet: allow one GN 1/1 at 100 mm per 25–30 covers for a main protein, one per 40–50 for a starch and one per 40 for vegetables, then add 20% for the service tail. A 300-cover banquet with three hot components lands around 20–24 pans — one full-height cabinet plus a roll-in rack, not the single cabinet most budgets assume. Power, circuits and what to declare on the order
Indicative draws, drawn from published manufacturer data across this class:
- Full-height mobile holding cabinet: roughly 1.4–2.0 kW. Humidified units sit at the top of that band.
- Half-height cabinet: roughly 1.0–2.0 kW — often not much less than a full-height unit, because the heater and controls are similar.
- Banquet plate cart: roughly 1.5–2.4 kW depending on plate count.
- Bain marie / hot cupboard: approximately 1 kW per GN 1/1 section; a three-section unit is around 2.9 kW.
- Passive insulated carrier: zero.
The practical problem is not the individual machine, it is the ballroom floor. Six plate carts on one 16 A circuit is more than 12 kW against a circuit rated for about 3.5 kW at 220 V single phase. Banquet floors and service corridors are usually the weakest electrical zones in a hotel because they were drawn for lighting and cleaning sockets. Count the carts, count the cabinets, and give the electrical consultant the total before first fix, not after delivery.
Voltage, frequency, phase and plug type are build parameters on this equipment, not site adjustments — element ratings, contactor coils and cable glands are all fitted on the production line. Declare 220–240 V/50 Hz, 220 V/60 Hz or 380–415 V three-phase, along with the socket type, at order stage. Banquet plating: pellets, bases and domes
Once food is on the plate, the cabinet stops being the thing keeping it hot. Three systems dominate:
Insulated bases and domes. A foam-insulated base traps the heat already in a pre-warmed plate; the dome slows radiant and convective loss. No power, no pre-heating, low cost per cover, modest hold time.
Pre-warmed base systems. Bases are heated in a convected-air base heater before plating. Manufacturers state these maintain serving temperature for an hour or more, which in practice covers plate-up, transport and a delayed speech.
Induction “heat-on-demand” systems. A ferrous element in the base is charged inductively at the point of plating. Published performance with a pre-heated plate and a high-performance dome is food held at or above 60 °C for more than 85 minutes.
Budget by cover, not by unit. A 500-cover banquet needs 500 base-and-dome sets plus breakage stock, and dome inventory shrinks — they get stacked wet, dropped and taken away on room-service trays. Order 10–15% spare domes with the original shipment rather than as an air-freighted afterthought.
Moving food off site: what passive carriers really deliver
Under Regulation (EC) 852/2004, Annex II, Chapter IV, conveyances and containers used to transport food must be capable of maintaining food at appropriate temperatures and allow those temperatures to be monitored. Notably, the regulation gives no number — the numbers come from national law. Annex II, Chapter IX also permits limited periods outside temperature control to accommodate the practicalities of transport, storage and service, provided there is no health risk.
Passive performance claims are stated under ideal conditions. A widely sold polyethylene carrier with foamed-in polyurethane insulation is rated for hot retention up to four hours, with published data showing roughly 88 °C falling to about 82 °C — on the order of 1.5 °C per hour. EPP box suppliers claim 1–2 °C per hour, but state the condition: more than 75% full and kept closed. That condition is the whole ballgame — a half-loaded carrier opened twice on a thirty-minute drive will not come close to its datasheet.
On certification: NSF/ANSI 4 cubiertos powered hot food holding, rethermalization and hot food transport equipment. Unpowered insulated boxes fall outside its scope, so “NSF” claims on passive boxes should be checked against the actual listing rather than assumed.
Cook-chill and regeneration for large banquets
Above roughly 200 covers, or where plating happens a long way from production, cook-chill with regeneration usually beats holding. The Irish FSAI’s Guidance Note 15 gives a workable reference discipline: cook to 75 °C core, chill to 3 °C or below within 150 minutes, store at 3 °C or below, and regenerate to 70 °C or above before service.
A regeneration (retherm) trolley is an insulated plate or tray trolley that docks at a powered station, runs a heating cycle — vendors report 45–60 minutes — then undocks and delivers on residual heat for roughly another 45 minutes. It is the standard approach in hospital and airline catering and increasingly in convention hotels. Prices are indicative FOB China for 2026, in 304 stainless with standard castors, and move with stainless coil pricing, insulation thickness and control specification. Five mistakes buyers make on holding and transport orders
- Buying pan count instead of pan depth. Sixteen slots at 65 mm becomes eight usable slots the day you standardise on 100 mm pans.
- Not measuring the route. Service lifts, corridor door leaves and threshold ramps decide the maximum cart width. A 50 mm overrun means the cart lives on one floor forever.
- Ignoring the banquet floor’s electrical capacity. Carts and cabinets are only mobile if there is somewhere to plug them in at the destination.
- Putting fried food in a humidified cabinet. Humidity is right for rice, roasts and braised dishes, and fatal for anything with a crust. Buy at least one dry, vented unit.
- Ordering passive carriers by litres. Buy them by GN module. A 40-litre box that does not take a GN 1/1 pan is decorative.
What to put on the purchase order
- Holding temperature you must meet (57 °C / 63 °C) and whether it must be met with the door in service use.
- Cabinet type: dry, humidified, or cook-and-hold; fan-forced or radiant.
- Rack pitch and pan depth you will actually run, plus tray or plate dimensions.
- Maximum external width and height, taken from a measurement of the lift and corridor doors on site.
- Voltage, frequency, phase, plug type, and the circuit rating available at the point of use.
- Spare parts to ship in the same container: door gaskets, castors, heating elements, thermostat or probe, latch and hinge set.
That last line matters more in this category than in almost any other. Holding cabinets and banquet carts rarely fail structurally — they fail on gaskets that harden, castors that seize on ramped thresholds, and door latches worn out by twenty openings an hour.
