Commercial Smokehouse Oven Buying Guide 2026: Smoke Generators, Trolley Capacity, Cycle Times, PAH Limits and FOB Prices
Most commercial kitchen equipment lists stop at the combi oven. But if you are fitting out a hotel butchery, a deli production room, a central kitchen supplying a restaurant group, or a meat plant that also sells retail packs, there is one machine that decides whether the whole department works: the smokehouse oven.
It is also the machine buyers get wrong most often — usually by ordering on chamber volume alone, discovering six months later that the smoke generator produces the wrong colour, the cycle takes ninety minutes longer than planned, or the product fails a polycyclic aromatic hydrocarbon (PAH) test at the first export inspection.
This guide covers what actually matters when you specify one: chamber and trolley capacity, the four smoke generation methods and what each does to your product, heating options, the utility connections that trip up site teams, the PAH limits that quietly determine your smoke generator choice, and indicative FOB China price bands for 2026.
What a commercial smokehouse oven actually is
A modern smokehouse — often sold as a “universal thermal chamber” or “cooking and smoking oven” — is not a smoker in the barbecue sense. It is a controlled-atmosphere processing chamber that performs several unit operations in one cabinet, in sequence, under program control:
- Drying — warm circulating air removes surface moisture so smoke can deposit evenly. Skip this and colour goes patchy.
- Smoking — smoke from an external or integrated generator is injected into the circulating air stream.
- Cooking / baking — dry heat, typically to a core temperature target.
- Steam cooking — saturated steam for high-yield cooking of emulsified products.
- Showering / cooling — a cold water spray inside the chamber to drop surface temperature fast.
Four subsystems make that possible: the insulated stainless chamber, the smoke generator, the air circulation system (fan, mixing chamber, dampers), and the control system. Universal chambers handle a working range of roughly 18 °C to 90 °C, which covers cold smoking, hot smoking, cooking and drying in one cabinet. If your product mix spans salami, frankfurters, smoked chicken and smoked fish, you want a universal chamber rather than a dedicated cooker.
How big a smokehouse do you need? Sizing by trolley, not by volume
Chamber volume in cubic metres is a marketing number. The unit that matters is carros — the wheeled rack frames you load outside the machine and roll in.
A standard single-trolley chamber takes one 1,000 × 1,000 mm trolley. Depending on the product and how it hangs, that trolley carries roughly:
- Sausages / frankfurters on smoke sticks: 120–200 kg per trolley
- Whole chickens or bone-in poultry on hooks: 90–150 kg per trolley
- Bacon slabs / loins on screens: 150–250 kg per trolley
- Fish fillets on mesh screens: 60–110 kg per trolley (limited by screen area, not weight)
Now work backwards from your production plan. Take target daily output, divide by kilograms per trolley, and multiply by cycle time — because cycle time is where budgets die.

A worked example: a hotel group central kitchen wants 400 kg of smoked chicken per day. At roughly 120 kg per trolley and a 140-minute cycle, one trolley position gives about three cycles per shift, or 360 kg. That is short. Two trolleys gives 720 kg with comfortable headroom — and headroom is what you want, because the second year of a central kitchen is always busier than the first.
Chambers are commonly built in 1, 2, 3, 4 and 6-trolley configurations, plus truck-load sizes above that. If you are choosing between one large chamber and two smaller ones, take the two: a single chamber down for a fan-motor fault stops the entire department, and two chambers let you run cold smoke and hot cook programs in parallel.
The four smoke generation methods — and why the choice is not just about flavour
This is the specification decision with the longest consequences, because it drives flavour, colour, cleaning labour, and — critically — your PAH result.
1. Smouldering (wood chip / sawdust) generators
The most common type. Sawdust or chips smoulder on a heated plate at controlled temperature; smoke is drawn into the air circuit. Cheap, familiar, forgiving, and easy to source fuel for anywhere in the world. The downside is combustion temperature control: run the plate too hot and PAH formation rises sharply.
2. Friction generators
A hardwood block is pressed against a rotating steel wheel; friction produces smoke at a lower and more stable temperature than smouldering. Cleaner smoke profile, notably lower PAH, less residue in the chamber. Higher capital cost, and you need a supply of hardwood blocks in the right dimensions — worth confirming locally before you commit.
3. Steam / superheated-steam generators
Sawdust is exposed to superheated steam rather than open smouldering. Very consistent, low PAH, low residue, and popular where product is exported into the EU. More complex, needs a steam supply or integral boiler.
4. Liquid smoke (atomising / drenching)
Purified smoke condensate is atomised into the chamber or applied as a drench. No combustion at all, so PAH is a non-issue, cleaning drops dramatically, and repeatability is excellent. Purists dislike it; large-volume producers use it because it holds a colour spec batch after batch. Many buyers now order a chamber with a chip generator plus liquid smoke atomisation and switch by product line.
What the PAH limits mean for your equipment decision
If your product will be sold in, or exported to, the European Union, this is not optional reading. Under EU maximum-level rules for contaminants in food — currently Commission Regulation (EU) 2023/915, which replaced Regulation (EC) 1881/2006 — smoked meat and smoked meat products and smoked fish are subject to limits on benzo(a)pyrene and on the sum of four PAHs (benzo(a)pyrene, benz(a)anthracene, benzo(b)fluoranthene and chrysene, together “PAH4”).
For smoked meat and smoked meat products, the maximum levels have been 2.0 µg/kg for benzo(a)pyrene and 12.0 µg/kg for PAH4 (wet weight) since 1 September 2014. A permanent derogation lets a named group of member states — including Finland, Sweden, Ireland, Croatia, Cyprus, Spain, Poland, Portugal, Latvia and Slovakia — market traditionally smoked products domestically at higher levels (benzo(a)pyrene below 5.0 µg/kg and PAH4 below 30.0 µg/kg), but that derogation is for products smoked and consumed in those countries. It is not a route for an importer.
The equipment consequence is direct. PAH formation is driven by combustion temperature, smoke density and contact time. In practice that means:
- A smouldering generator with tight plate-temperature control, indirect smoke ducting and a settling section will usually pass. One without those things is a gamble.
- Friction, steam and liquid smoke systems are the low-risk choices for EU-bound product.
- Ask for the smoke duct length and whether there is a condensate trap or tar separator between generator and chamber. Tar carryover is where a lot of surprise PAH comes from.
Two practical cautions. First, PAH is a product-and-process result, not an equipment certification — no smokehouse can be sold as “PAH compliant”, so treat any supplier who claims that as a supplier who has not read the regulation. Second, limits and derogation lists are amended periodically; confirm the current text and your destination market’s rules with your food-safety consultant before you finalise a process. Whichever you choose, get the connection details agreed at drawing stage, not at commissioning. The utilities that catch site teams out
A smokehouse is one of the most demanding single connections in a food facility. Budget for all of it:
- Potencia: 380–415 V / 3-phase / 50 Hz is standard; 220 V / 60 Hz and 440 V variants are built to order. Tell us the site voltage, frequency, phase and whether a neutral is present antes production — heating element ratings, contactors and transformer taps are all built to that declaration.
- Agua: for the shower cycle and for chamber wash-down. Flow matters more than pressure; a shower cycle that dribbles adds twenty minutes to every batch.
- Desagüe: a floor gully directly under or beside the door, sized for shower discharge plus wash water. Smokehouse effluent carries fat — it must reach a grease separator. See our kitchen drainage and grease trap guide for gully placement and falls.
- Extracción: smoke has to leave the building. In urban locations — increasingly including hotel back-of-house in city centres — you may need a wet scrubber, electrostatic precipitator or afterburner. Check local air-quality rules early; this single item has delayed more smokehouse installations than any other.
- Ceiling height and door route: trolleys are tall. Measure the door openings, corridor width and any lift on the delivery route.
Materials, hygiene and cleaning
Specify AISI 304 for the chamber interior and exterior as a minimum; 316 where coastal air or aggressive cleaning chemicals are in play. The details that decide whether the machine is cleanable in ten years, not ten weeks: fully welded and ground internal corners, a coved chamber floor falling to the drain, a door seal that can be replaced without a service engineer, and CIP spray balls or a wash system integrated into the air circuit rather than bolted on.

A smokehouse sits at the dirty end of that spectrum, so the tolerances matter more, not less.
One practical note on cleaning labour: a chip-fired chamber running eight hours a day typically needs a full internal wash weekly and a smoke-duct clean monthly. Tar in the duct is a fire risk, not just a hygiene one — which is why smokehouse exhaust routes should be assessed alongside the rest of your kitchen fire suppression design.

Two budget items buyers routinely forget: spare trolleys (you need at least twice as many trolleys as chamber positions so loading happens while the chamber runs), and the exhaust treatment package, which can add a fifth to the equipment cost in a city-centre installation.
Standard chamber or built to your room?
Standard sizes are cheaper and faster. But smokehouses frequently land in rooms that were not designed for them — a converted store, a mezzanine with a low soffit, a butchery where the only viable door position faces the wrong way. Chamber external dimensions, door hinge side, control panel position, service-side access, trolley rail height and the exact position of drain and duct connections can all be built to your approved drawing, and on non-standard dimensions we do not charge tooling.
What that buys you is a machine that is installed in a day instead of one that requires the room to be rebuilt around it. On timing: our standard ex-factory lead time is 25–45 days, against a 60–90 day industry norm for built-to-order thermal processing equipment. On a smokehouse project that difference is usually spent well — it absorbs the one round of local exhaust-permit revisions that almost every installation needs, without moving your opening date.

What is the difference between a smokehouse oven and a combi oven?
A combi oven controls dry heat and steam. A smokehouse adds a smoke generator, a smoke-capable air circuit, a shower cycle and much heavier insulation, and is built to be cleaned of tar rather than of grease. You can hot-smoke small volumes in some combi ovens with a smoker accessory, but you cannot cold smoke, you cannot hold a colour spec across batches, and you will contaminate the oven for other production.
How many kilograms can a two-trolley smokehouse produce per day?
Roughly 700–1,000 kg per eight-hour shift for hot-smoked poultry or sausage, assuming 240–400 kg per batch and three to four cycles. Cold-smoked products run overnight, so daily output is one batch. Always size on your slowest high-volume product, not your fastest.
Do I need a friction or steam smoke generator to meet EU PAH limits?
Not necessarily — a well-controlled smouldering generator with proper duct condensate separation can meet them. But friction, superheated-steam and liquid smoke systems carry materially lower risk, and if EU export is central to your business case they are the safer specification. PAH compliance is always a result of your product and process, verified by testing, not a property of the machine.
What power supply does a commercial smokehouse need?
A two-trolley electric chamber is typically 36–54 kW at 380–415 V three phase, 50 Hz. Machines are built to the supply you declare — 220 V, 440 V and 60 Hz variants are all standard build options, but they must be specified before production because element ratings, contactors and transformer taps differ.
Can a smokehouse be installed in a hotel back-of-house?
Yes, and increasingly it is — hotels with in-house charcuterie or smoked fish programs run one- and two-trolley chambers. The constraint is almost never the kitchen; it is the exhaust route and local air-quality rules. Resolve the duct route and any scrubber requirement before you order, and confirm floor loading if the chamber sits above ground level.
