Karafuu Beach Resort & Spa Kitchen Project in Zanzibar, Tanzania
Connect buffet production, seafood orders and poolside pizza service.
A resort with several dining outlets needs clear boundaries between shared preparation, outlet finishing and used-dish returns. GRACE can develop the equipment, custom workstations and utility schedule together, with coastal exposure and island delivery built into the brief.

01 / THE RESORT
Different dining experiences across one coastal resort
Karafuu Beach Resort & Spa is in Michamvi Pingue on Zanzibar’s east coast, Tanzania. Its official website lists 166 accommodation units, with rooms, suites, cottages and villas. Gardens, pools and beachfront dining spread the guest experience across several settings.
Kijiji serves international buffets; Le Grand Bleu offers seafood à la carte; and Bondeni Pizzamore serves poolside pizza at lunch and dinner. Paradice adds gelato and desserts, alongside pool and cocktail bars. This mix calls for batch production and individual-order finishing to be planned as distinct tasks, with clear transfers between them.

02 / SERVICE & WORKFLOW
Give each service its own preparation and handover points
GRACE can map the menus and service timetable into three connected workstreams.
Replenish the buffet in planned batches
Allocate ingredients and GN pans by the next cooking cycle, with a landing table for covered transfer. Keep chilled and ready-to-eat items on their own preparation route, and set refill frequency from the service window and expected diners.
Separate pizza assembly and seafood preparation
Give dough handling, toppings and oven loading a defined sequence. For seafood orders, plan dedicated raw preparation and storage conditions, followed by a clean plating point. Shared ingredient preparation should not force raw seafood through pizza assembly or finished-food dispatch.
Include glassware and reusable bottles in returns
The resort describes serving drinking water in glass bottles and glasses instead of plastic bottles. Include these returns in the washing brief: separate collection and inspection, suitable racks and a bottle-specific cleaning method verified with the equipment supplier.
03 / KITCHEN PLANNING
Plan the shared work, then define the outlet interfaces
Through commercial kitchen planning, GRACE can develop a common preparation area and the finishing positions needed by each menu. Custom stainless steel fabrication adapts sinks, prep tables, tray landings and shelving to the agreed food and dish routes. The GRACE 3D designs below illustrate cooking around a shared prep island, and a preparation bench with washing and utensil storage nearby.
04 / EQUIPMENT OPTIONS
Four equipment options linked to the dining mix
These catalogue options support buffet batches, pizza finishing, chilled preparation and crockery washing. Final capacity follows the menus and peak service demand.
Ten-tray combi steam oven
GR-10-AC
10 × GN 1/1 capacity, 18.6 kW and automatic cleaning. A batch-cooking option for buffet production, with GN loading, refill timing, water treatment and drainage considered together.
Explore combi ovens →Two-deck electric pizza oven
GR-EPZ-8
9 kW; two 600 × 600 × 135 mm chambers. An electric deck-oven option for a planned pizza station. Coordinate dough preparation, topping storage, oven loading and the finished-pizza landing surface.
Explore bakery and pizza equipment →Four-door refrigerated work counter
GR-GN4100TN
540 L; 2230 × 700 × 850 mm; catalogue SS304 version. Combines chilled ingredient holding with a preparation surface. Specify food-appropriate storage temperatures, loading and ventilation around the actual kitchen conditions.
Explore refrigeration equipment →Hood-type dishwasher
GR-60H-A
11 kW; 650 × 800 × 1645 mm. Plan with scraping, pre-rinsing and clean-rack landing. Match the washing system to return peaks and crockery types; confirm appropriate racks and processes separately for glassware and bottles.

Specify for coastal exposure, warm kitchens and island support
The equipment schedule should carry installation and maintenance requirements alongside model numbers.
Refrigeration airflow and electrical load
Confirm each refrigeration model’s permitted ambient conditions and leave access for condenser cleaning. Keep heat rejection clear of ovens and exhaust discharge. Coordinate 50 Hz, actual site voltage, phases and simultaneous cooking load with the electrician, including any backup-supply arrangements.
Steel surfaces and incoming water
Assess indoor preparation and exposed beachfront service separately when choosing steel grade, finish and fasteners. Provide accessible surfaces for fresh-water cleaning and drying. Test incoming water against the selected oven and washer requirements before agreeing filtration, treatment and drain connections.
Shipment and maintenance on the island
Confirm the delivery route, unloading equipment and access dimensions before packing. Group custom items and equipment by installation area, with labelled connection information. Include model-specific manuals and a routine-parts list so the operator can plan local maintenance and future replacements.
