Ocean Paradise Resort & Spa Kitchen Project in Zanzibar
Breakfast upstairs, poolside dining and seafood by the beach.
For a resort with several dining outlets, kitchen planning has to connect preparation, replenishment and service across the property. GRACE develops the equipment and routes around that daily operation.

01 / THE HOTEL
Three restaurants with different service demands
Ocean Paradise Resort & Spa sits on Zanzibar’s north-east coast, with 98 rooms and suites in gardens leading to the Indian Ocean. Its official dining pages describe breakfast at Ocean Restaurant, poolside dining at Jahazi, and seafood and Swahili flavours at beachfront Mawimbi.
This combination makes the route from preparation to each restaurant as important as the cooking equipment. The planning brief needs each outlet’s menu, peak covers, service level and replenishment route.

02 / SERVICE & WORKFLOW
Plan around the way each restaurant serves
GRACE’s approach links shared preparation with outlet-specific finishing and collection points. The following priorities follow the resort’s published dining offer.
Ocean · breakfast replenishment
The upper-level restaurant serves a breakfast buffet. Plan small, regular replenishment batches, with separate handling for hot dishes, bakery items and chilled food. Check the full delivery route between preparation and the buffet.
Jahazi · lunch-to-dinner changeover
Poolside à la carte lunch and wood-fired pizza give way to a themed dinner buffet. Keep finishing for individual orders separate from bulk preparation, and reserve space to stage buffet containers before the evening changeover.
Mawimbi · seafood preparation
For the beachfront seafood and Swahili menu, organise chilled ingredient storage, raw seafood preparation and final plating as distinct tasks. Coordinate clean food delivery and used-tableware return at the service point.
03 / KITCHEN PLANNING
Connect the preparation kitchen to the dining outlets
Through commercial kitchen planning, GRACE can map shared storage, preparation, cooking and wash-up alongside restaurant dispatch routes. Custom stainless steel fabrication can adapt preparation sinks, landing tables and shelving to the available space, keeping access clear for staff, service carts and maintenance.
04 / EQUIPMENT OPTIONS
Four options for production, cold storage and service
These equipment options address different parts of the resort operation. Final capacities follow outlet demand, delivery routes and site conditions.
10-tray combi steam oven
GR-10-AC
10 × GN 1/1 capacity supports organised roasting and steaming batches. Plan pan availability and dispatch alongside the 18.6 kW electrical load, water inlet and drain connections.

GR-GN4100TN
540 L capacity and a 304 stainless steel body combine ingredient storage with preparation. Allocate raw and ready-to-eat ingredients separately, and keep condenser access clear.
Explore refrigeration equipment →Modular ice maker
GR-350P
An air-cooled option with a catalogue-listed 125 kg storage bin. Size ice production and reserve storage from peak drinks demand, then check performance at the planned air and incoming-water temperatures.
Explore ice-making equipment →Insulated food carrier
60001
A portable option for moving prepared food between production and service points. Check the loaded weight, route and pan fit; define dispatch and arrival temperature checks in the service procedure.
Discuss food transport options →05 / COASTAL EQUIPMENT PRIORITIES
Specify for the coast, heat and island maintenance
Zanzibar’s warm coastal setting makes material selection, heat rejection and service access practical equipment decisions.
Salt exposure and stainless details
Select steel grade and finish for each position, with higher corrosion resistance considered for salt-exposed fittings. Smooth welds, accessible corners and surfaces that drain and clean easily belong in the fabrication specification.
Refrigeration and ice in warm conditions
Specify the operating ambient temperature as well as storage volume. Leave air-cooled equipment ventilated, away from cooking heat, and confirm ice output at relevant air and water temperatures before selecting capacity.
Utilities and parts before shipment
The resort’s destination guide lists a 50 Hz supply. Confirm actual site circuits for the oven and refrigeration, plus incoming-water treatment and drainage. Agree equipment access, replaceable components and a spare-parts list before dispatch.

An outlet-by-outlet plan the project team can review
Share the kitchen and restaurant plans, menus, peak covers and replenishment routes. GRACE can prepare a zoning layout, an equipment schedule with utilities and access requirements, and custom stainless details. Agree which tasks are shared and which stay at each outlet, then coordinate packing, site connections and installation guidance around that plan.
