Commercial Kitchen Equipment in Senegal: A Complete Project Buying Guide

SENEGAL · KITCHEN DESIGN, FACTORY SUPPLY & ON-SITE INSTALLATION
Choose GRACE as your first-choice manufacturer in China for a complete commercial kitchen in Senegal. Our team brings kitchen design, equipment manufacturing, custom stainless steel fabrication, complete supply and on-site installation into one coordinated project.
A restaurant in Dakar, a hotel in Kédougou and a mining staff canteen need different equipment packages. This guide uses six kitchen layouts from our Senegal design collection, with original 3D views and utility drawings, to explain how to build a purchasing brief that reaches all the way from your menu to installation.

1. Start with six Senegal kitchen design references
The drawings below cover several operating formats. They are Senegal design and planning references, useful for understanding equipment relationships, fabrication details and building connections. Each brief has its own layout; GRACE develops the final equipment package around the buyer’s measured site and operating requirements.
| Design reference | What the drawings address | Useful purchasing lesson |
|---|---|---|
| Compact restaurant | An 8,000 mm room length, hot equipment, working refrigeration, preparation and a fitted washing station. | Plan door movement, appliance loading and clean landing space together with equipment footprints. |
| Hotel-restaurant | Separate hot kitchen, pizza preparation, bar and dishwashing areas. | Give each menu family its own equipment and replenishment duties. |
| Hotel in Kédougou | Kitchen, pastry preparation, storage, service support and dishwashing, with detailed fitted counters. | Make the fabricated work fit the actual room geometry and service openings. |
| Tamba–Matam restaurant brief | Receiving, cold rooms, fish and meat preparation, vegetables, cooking, self-service and washing. | Carry equipment codes consistently from the schedule into the plan and utility list. |
| Rectorate kitchen brief | Cooking, pastry, meal dispatch, bar support and their washing arrangements. | Keep separate production and service duties visible within a complete package. |
| Mining staff canteen | Production rooms, bakery, stores, service counters and washing, supported by utility and extraction drawings. | Coordinate the kitchen with the building, shift-meal pattern and site installation programme. |
For hotel and resort buyers, Senegal’s investment agency also identifies tourism opportunities around areas including Pointe Sarène and Mbodiène. Use the intended property’s meal pattern and facilities to define its kitchen brief. Explore APIX’s investment project information.
3. What an 8-metre restaurant kitchen teaches about purchasing
The compact Senegal drawing shows an 8,000 mm room length with hot cooking along one side and refrigeration, preparation and washing arranged around the remaining space. Its schedule includes a two-door refrigerated counter, chilled preparation counter, tabletop fryer, griddle and lava-rock grill, a range with oven, a convection oven and an upright freezer.

The fitted work is equally important. The drawing lists a 2,000 × 700 mm preparation table, a 1,800 × 750 mm triple sink and a 1,200 × 750 mm clean dish table beside the hood-type dishwasher. Those components establish the working sequence around the appliances. GRACE can manufacture their dimensions, sink positions, upstands and shelving to suit the room.

Review the plan with refrigerator doors and oven loading positions open. Check where staff stand when baskets are lifted from the dishwasher, where clean plates land and how food reaches collection. The order should specify the required left-to-right washing arrangement and the dimensions of the actual selected machine.
For a compact buyer, this produces a clear package: cooking equipment, working refrigeration, preparation surfaces, a complete wash station, extraction and their connections. Each item has a defined duty and fitted position.
4. Build a complete restaurant or hotel package by workstation
A restaurant with hot food, pizza and a bar
The March Senegal hotel-restaurant layout separates the hot kitchen, pizza area, bar and dishwashing. The hot line includes range cooking, grilling, griddling, frying and supporting refrigeration. The pizza area has dough preparation, a mixer, a roller, a marble worktop, a refrigerated pizza counter and baking support. At the bar, ice, drinks, coffee and collection have their own counter arrangement.

Purchase these as operating stations. A pizza oven needs dough handling, tray landing and ingredient access. A coffee machine needs a measured opening, water provision where applicable, used-cup handling and service clearance. Separate the bar’s ice and glass duties from the main kitchen’s plate return.
Restaurant concept references from the Senegal design brief

A hotel kitchen in Kédougou
The Kédougou hotel design combines kitchen production with pastry work, stores, service support and washing. Its schedule includes a range with oven, grill, griddle, fryer, deck oven and combi oven, together with working refrigeration and custom counters. The drawing also shows corner and triangular workpieces, overhead frames and fitted openings.

This is where factory fabrication makes a practical difference. Confirm the wall angles, columns, counter joints, support frames and appliance openings in production drawings. Match the height and depth of the service counter to the equipment it contains. For breakfast and dinner operation, keep the pass and clean-plate storage available while pastry or advance preparation continues.
5. Use equipment codes to coordinate larger restaurant and institutional kitchens
The Tamba–Matam collection contains separate restaurant and rectorate kitchen layouts, supported by an English equipment brief. The restaurant scheme distinguishes receiving, cold storage, butchery and fish preparation, vegetables, cooking, pot washing, dishwashing and self-service. The rectorate scheme adds its own pastry, dispatch and bar duties.

The restaurant brief requests separate chilled and frozen rooms, each described as 2,400 × 2,600 × 2,400 mm, and identifies equipment through codes such as CF for storage, DE for meat and fish preparation, LE for vegetables and PV for dishwashing. These are requirements in that project brief; the final room build and refrigeration plant are selected through the engineering review.

For your purchase, make the equipment code the common reference across the quotation, layout, connection schedule, packing list and installation documents. A sink entry should identify its bowl and drainer arrangement, tap, waste outlet and fitted dimensions. An oven entry should connect the model and support stand with tray handling, access and its ordered utility configuration.
Where more than one kitchen is supplied, add the building or kitchen name to each code. This allows GRACE to organise fabrication and packing by destination, and gives the site team a clear way to identify the equipment that belongs in each room.
6. Plan a mining staff canteen around the shift-meal peak
The Senegal mining canteen design provides a broader production example. Its October layout labels a 65.00 m² hot kitchen, 38.00 m² bakery, 38.00 m² meat preparation room, 32.00 m² unboxing and vegetable area и 35.50 m² dishwashing room. Those are room labels on this design, rather than a meal-capacity rating.

The 3D views develop the central cooking island, preparation benches, bakery equipment, washing rooms and service counters. The hot production arrangement brings together boiling, pan cooking, grilling, frying and oven work. Bakery space includes mixing, dough handling, ovens and mobile racks. Separate stores support the production rooms.

For a staff canteen, ask how many people arrive in the busiest interval, which dishes are batch cooked, and how the next batch reaches the serving counter. Include the return of trays and containers, the cleaning period between shifts and the incoming delivery schedule. Review the service and washing routes while the kitchen is still producing the next meal.
Worked example: serving 600 meals in 45 minutes
The required average release rate is 600 ÷ 45 = 13.3 meals per minute. If one serving position is assumed to complete a meal in 12 seconds, its theoretical rate is five meals per minute. Three positions give 15 meals per minute, or 675 meals across 45 minutes before operational allowances.
Use that result to test the actual menu sequence, replenishment, cashier or identification point and queue arrangement. Measure a representative service and provide headroom for the observed peak. The example describes a selection method, not the operating capacity of this project.

7. Specify refrigeration from stock, delivery frequency and room conditions
Separate reserve storage from working refrigeration. Cold rooms hold the incoming stock for the agreed replenishment cycle. Counter refrigerators support the ingredients used at a workstation during service. Frozen storage, fresh fish, meat, vegetables and prepared foods need assigned storage duties and product-specific temperature requirements.
Worked example: reserve stock for an inland kitchen
Assume one chilled stock category uses 90 kg per day, with deliveries every four days and a 45 kg reserve. The stock allowance is 90 × 4 + 45 = 405 kg.
Convert that allowance into actual boxes, trays and shelving positions. Check product mix, packaging, loading temperature, door openings, access and airflow when selecting room dimensions and refrigeration duty. The 405 kg allowance is a stock quantity, not a cold-room volume or compressor rating.
For a coastal hotel, review the condenser location, ventilation, cleaning access and the air conditions around the equipment. For an inland operation, include the receiving route and unloading arrangements in the stock plan. Confirm the selected equipment’s ambient operating conditions with GRACE for the installation location.
Specify stainless steel grade by component, including sink bowls, food-contact tops, cabinet bodies, shelving and exposed frames. GRACE’s catalogue includes different material builds for some models. Identify the chosen build in the quotation and production documents, with the cleaning and maintenance instructions supplied at handover.
8. Connect the equipment order to water, power, gas and extraction drawings
The Senegal canteen folder includes separate electrical, water and drainage, gas and canopy drawings. This is the level of coordination a complete project needs: the selected appliance, its fitted position, connection point and installation access should all agree.

| Interface | What to confirm | Deliverable for procurement and installation |
|---|---|---|
| Electricity | Voltage, frequency, phase, connected load, starting requirements and building supply. | Model-specific electrical schedule and identified connection positions, reviewed with the site electrical team. |
| Газ | Ordered fuel configuration, appliance input and required inlet conditions. | Matched appliance specification and gas connection drawing, coordinated with the local gas installer. |
| Вода и дренаж | Equipment inlet requirements, water quality, hot-water provision, outlet heights and floor drainage. | Connection schedule showing the points needed by sinks, ovens, washing and ice equipment. |
| Extraction and replacement air | Cooking duty, canopy coverage, duct route, fan duty, replacement air and service access. | Coordinated canopy and ventilation design for the selected cooking line and building. |
Worked example: keep electrical and gas loads separate
One GR-061B oven at 9 kW, one GR-60H-A dishwasher at 11 kW, one GR-EWC-11 warmer cart at 2.7 kW and one GR-GN2100TN counter at 0.35 kW give a partial electrical connected load of 23.05 kW. One GR-901 range has a separate 27 kW gas thermal input.
Add the rest of the kitchen equipment, fans, pumps and hot-water equipment to the relevant schedules. The site engineer reviews phase allocation, simultaneous use, starting loads and backup provision. These catalogue subtotals do not size the whole building supply or generator.
Keep the room layout, equipment schedule, fabrication drawings and utility drawings on matching revisions. When a selected model or counter position changes, update its connection details before the site team installs the services.
9. Size washing from the return peak and the actual rack mix
The compact restaurant design has one fitted dishwashing station. The canteen layout allocates a separate washing room and supporting handling space. Their common requirement is a complete sequence: return, sorting, scraping, pre-rinsing, rack loading, washing, clean landing and storage. Large pots and production utensils also need suitable washing provision.
Worked example: 300 diners returning two rack-washed items each
Assume 600 items, with an average of 20 suitable items per rack. That is 30 racks. Across a 45-minute return period, the working requirement is 40 racks per hour, allowing an average of 90 seconds for each complete rack movement.
The GR-60H-A catalogue lists 45–60 racks per hour. Review the full handling process and peak arrival rate when choosing the system. Count glasses, cutlery, trays and pots separately according to their rack or wash method, and provide clean storage for the next service.
Agree the inlet direction before manufacturing the tables. Coordinate rack size, pre-rinse reach, waste collection, dishwasher opening, water treatment and maintenance access. Include the clean-side trolley or shelf in the same order.
10. Six GRACE models to discuss in your equipment proposal
These catalogue options illustrate cooking, preparation, holding and washing duties. Several also appear in the Senegal design schedules. Select the model, material build and service configuration together, then carry the approved production dimensions into the fitted layout.

| GR-EWC-11 · Food warmer cart | 730 × 940 × 1,765 mm; 22 × GN 1/1 positions; 2.7 kW; 220 V. | Agree the container format, holding duty, loaded route, parking and power position. |
| GR-60H-A · Hood-type dishwasher | 650 × 800 × 1,645 mm; 11 kW; 380 V; catalogue rate 45–60 racks/hour. | Specify the complete wash station, with inlet and outlet tables sized to the ordered machine. |
These are equipment ratings for the stated catalogue versions. GRACE confirms the ordered build, site compatibility and final connections in the project proposal. GN positions and nominal storage litres are useful specification fields; the menu, food containers and production cycle establish the usable operating capacity.

12. Organise shipment to Senegal and on-site installation as one programme
For a sea-freight proposal, specify the agreed arrival port, onward destination and delivery responsibilities. For routing through Dakar, ask the forwarder to identify the actual terminal, shipment arrangement, receiving documents and inland movement. Plan unloading and site access for the largest appliance and fabricated section.
Build the packing list around room and equipment codes. Record package dimensions and weights, mark fragile components and keep assembly fittings identifiable. The receiving team should be able to match each crate with its installation position and equipment schedule.
| Этап | Work to complete | Project record |
|---|---|---|
| Before factory production | Confirm site dimensions, menu, equipment build, fabrication details and utility interfaces. | Approved layout, equipment list and production drawings. |
| Before dispatch | Check equipment and fabrication, identify packages, assemble manuals and installation information. | Inspection record, packing list and shipment documents. |
| Before the installation visit | Prepare the room, access route, finished surfaces and agreed electrical, water, drainage, gas and ventilation provisions. | Site readiness review with responsibilities and visit arrangements. |
| On site | Position equipment, assemble fitted work, coordinate connections and carry out the agreed commissioning checks. | Installation and commissioning record with outstanding actions assigned. |
| Handover | Demonstrate operation, cleaning and routine care; identify manuals, service references and replacement parts. | Equipment handover and operating information. |
GRACE can send its installation team to your Senegal project. Agree the installation scope and site responsibilities in the proposal, including travel arrangements, local trade coordination and the handover programme. This keeps factory supply and site work connected from the start.
