Commercial Vacuum Packing Machine Buying Guide 2026: Chamber Sizes, Pump Capacity, Sous Vide & FOB Prices
A vacuum packer is one of the few machines in a commercial kitchen that pays for itself in a measurable way. It extends the usable life of prepped proteins from days to weeks, it makes batch cooking and cook-chill possible, and it stops a walk-in from quietly converting food cost into waste. It is also one of the machines buyers most often under-specify, because the catalogue photographs all look the same and the price spread between a USD 300 machine and a USD 5,000 machine is not obvious until the first busy week.
This guide covers what actually differs between models — pump capacity, chamber geometry, seal bar length, gas flush — and what that means for a hotel prep kitchen, a commissary or a butchery. Prices are FOB China for 2026 and are indicative ranges, not quotations.
Chamber machine or external sealer: the decision that comes first
An external (suction) sealer clamps the open end of a textured bag and pulls air out through the bag mouth. A chamber machine puts the whole bag inside a sealed chamber, evacuates the chamber and the bag together, then seals. This is not a price tier — they are different tools.
- External sealers only work with embossed or channelled bags, which cost roughly two to four times as much as flat chamber bags. They cannot handle liquids reliably, because the pump draws marinade and juices into the machine.
- Chamber machines use cheap flat poly-nylon bags, handle soups, stocks, marinades and brines without difficulty, reach a far deeper vacuum, and are the only realistic option for sous vide or any cook-chill programme.
For any operation packing more than a few bags a day, or packing anything wet, a chamber machine is the correct answer. External sealers make sense only as a secondary unit for dry goods.
Pump capacity in m³/h is the number that sets your cycle time
The single most useful specification on a chamber machine is the rotary vane pump’s free air displacement, quoted in m³/h at 50 Hz. It determines how quickly the chamber reaches working vacuum, and therefore how many bags per hour the machine actually produces — not the motor kW, and not the chamber size.
- 4–10 m³/h — tabletop units with a 260–300 mm seal bar. Cycle 40–60 seconds. Suitable for a café, a small restaurant or a bar packing 20–40 bags a day.
- 16–25 m³/h — single chamber, 400–450 mm bar. Cycle 25–40 seconds. The workhorse size for a hotel prep kitchen or a 120-seat restaurant.
- 40–63 m³/h — single chamber, 500–600 mm bar, or a compact double chamber. Cycle 18–30 seconds. Butchery, banqueting prep, small commissary.
- 100–200 m³/h — double chamber floor machines with 2 × 600–900 mm bars. Cycle 15–25 seconds per chamber, and the operator loads one side while the other evacuates. Central kitchens, meat processors, airline and institutional catering.
A good chamber machine pulls down to 1–2 mbar absolute; most kitchen work runs at a 5–10 mbar set point. Be sceptical of a specification quoting only a percentage (“99.9% vacuum”) without an absolute figure and a pump displacement — the percentage says nothing about how long it takes to get there.
Seal bar length and chamber depth: size the machine to the bag
The seal bar has to be longer than the widest bag you will ever run, and the chamber deep enough for the tallest product. Both are easy to get wrong on paper.
- Portioned proteins and sous vide pouches: 260–400 mm bar, 90–120 mm chamber depth.
- Whole primals, poultry, 5 kg cheese blocks, gastronorm-depth batches: 450–600 mm bar, 150–180 mm depth.
- Bone-in legs, whole fish, 10 L stock batches: 700–900 mm bar, 200–220 mm depth, usually a floor model.
A double seal bar (two parallel wires) is worth specifying for anything frozen or bone-in: a single weld on a stiff, cold bag is the most common cause of vacuum loss in storage. A bi-active bar, sealing from both sides, suits foil-laminate films.
Gas flush (MAP): when the machine needs a second circuit
Modified atmosphere packing backfills the evacuated chamber with a nitrogen and carbon dioxide mix before sealing. It protects products that crush under full vacuum — breads, pastries, soft cheeses, prepared salads — and extends shelf life on retail packs.
Gas flush is not a software setting: it needs an injection manifold in the chamber, a solenoid and a regulator, plus a cylinder connection with local approval. Retrofitting is expensive and often impractical, so decide before the order. Expect roughly USD 250–700 on the FOB price.
Sous vide: what the packer has to deliver before the circulator matters
Sous vide is discussed as a cooking technique, but the packing step governs safety and yield: a bag with residual air floats and cooks unevenly, and a weak seal fails in the bath and floods the product.
For sous vide work, specify a chamber machine with an adjustable vacuum set point (so delicate fish is not crushed at 2 mbar), a soft-air return valve, and a seal time you can tune per film thickness. On the cooking side, immersion circulators for commercial use run 2–3 kW with a stated stability of ±0.1–0.5 °C and a circulation rate matched to bath volume; a 25–60 L bath is typical for a restaurant, 60–120 L for banqueting. Cook-chill only works if there is chilling capacity to match, which is why a sous vide programme almost always arrives alongside a blast chiller rather than a blast freezer, and often alongside a combi oven running low-temperature steam cycles.
Reduced oxygen packaging is a HACCP decision, not just a purchase
Vacuum packing creates exactly the low-oxygen, refrigerated conditions in which Clostridium botulinum and Listeria monocytogenes are most dangerous, so most food safety regimes treat it as a controlled process. Under the FDA Food Code model that many jurisdictions mirror, a food service operation packaging time/temperature-control-for-safety food by cook-chill or sous vide generally needs a HACCP plan approved in advance by its regulator, and product life is capped at seven days at 5 °C (41 °F) or below unless the plan justifies otherwise. Longer shelf lives depend on additional cooling steps — cooling to 5 °C in the sealed package, then to 1 °C (34 °F) within 48 hours.
Rules differ by country and your local authority is the one that matters. The practical point for a buyer is that the machine specification should support the plan: a loggable cycle record, a calibrated vacuum gauge and labelling discipline at the pack station are what an inspector asks about.
Consumables are the real running cost
Downtime on a vacuum packer is almost always caused by a part costing under USD 40. Rotary vane pumps need an oil change every 200–500 running hours, more often in a hot kitchen, and oil emulsified with water vapour is the usual reason a machine “stops pulling a vacuum”. Seal wires, Teflon cover tape and the silicone counter-bar are wear items measured in weeks, not years.

Power, siting and the pack room around the machine
Tabletop chamber machines run 0.75–1.5 kW on single-phase 220–240 V. Single chamber machines from 500 mm upward and all double chamber machines are typically 2.2–5.5 kW on three-phase 380–415 V, and the pump motor is directional — it must be commissioned with the correct phase rotation or it will not pull down. Confirm destination voltage, frequency and whether the site has a neutral before the machine is built.
Siting matters more than most layouts allow for. The pump exhausts warm, oil-misted air, so the machine wants clearance and ventilation, not a sealed cabinet under a worktop. It should sit between the chill store and the labelling point, at a height that lets an operator load a 6 kg bag without lifting. Frequently asked questions
Can a vacuum packing machine handle soups and marinades?
A chamber machine can, because the pressure inside and outside the bag falls together and liquid is not drawn toward the pump. Chill the liquid first — anything above roughly 10 °C will boil off at working vacuum and trip the cycle. External suction sealers cannot do this reliably and will eventually draw liquid into the pump.
How many bags per hour will a chamber machine actually do?
Take the cycle time and add loading. A 16–25 m³/h single chamber machine on a 30-second cycle produces roughly 60–80 bags an hour in real service with one operator. A double chamber machine at 100 m³/h reaches 200–300 because the operator works one side while the other evacuates.
What maintenance does a vacuum packer need?
Change the pump oil every 200–500 running hours and run a gas ballast cycle daily to purge moisture. Replace seal wire and Teflon tape when welds start to vary, typically every few weeks in heavy use. Check the chamber lid gasket monthly. Nearly all “the machine won’t pull a vacuum” calls trace back to contaminated oil or a worn gasket.
Do I need a HACCP plan to vacuum pack in a restaurant?
Vacuum packing raw product for short-term storage is usually treated as ordinary handling. Cook-chill and sous vide packing of time/temperature-control-for-safety food is different and generally requires a documented HACCP plan approved by your local authority, with shelf life limited accordingly. Check with the regulator in your market before the process goes live.
What size machine suits a 150-room hotel?
A 450–500 mm single chamber machine at 20–40 m³/h covers a single production kitchen comfortably. If the property runs banqueting for 400-plus covers alongside outlet service, a 2 × 600 mm double chamber machine at 63–100 m³/h is the better fit and removes the pack station as a bottleneck on function days.
